Potato Pancake

Tomorrow is International Pancake Day. This is one of my favorite recipe, my mom always makes this type of pancake. Very quick preparation, easy and simple as well. It is very healthy too. Anyone of all ages can eat it, no extra fat in it..

Ingredients :

3 cups peeled, diced raw potatoes
1 small onion, quartered
1/4 cup milk
2 eggs
3 Tablespoons flour
1 teaspoon salt
1/4 teaspoon baking powder


Step 1: Put all ingredients into blender or food processor; blend until all potatoes go through the blades, about 10 seconds., except the onion.  (Do not over blend as potatoes will liquefy.) Mix the onion in the batter.

Step 2: Pour small amounts on a hot, greased griddle and fry until brown on both sides, turning once.

Step 3: Serve these pancakes immediately with butter and maple syrup.

Makes 4 servings.

When I was young, I loved this pancake with fresh Honey.. you can try that too, very yummy..
