Roast Chicken Recipe – Sorry to be so late, anonymous!

So here I am finally with the recipe.

You will need: 4 Chicken Breasts

Balsamic Vinegar or if you dont like that, regular vinegar about 2 -3 tbs

Garlic Clovers, minced – 4 or 4 teaspoons store bought minced garlic

Salt and pepper to taste

Rosemary 3 – 4 sprigs

Butter (melted) or Olive Oil

Chop the chicken breasts into smaller pieces (maybe half of each breast piece), the smaller you make it, the lesser time to roast.

Arrange in a container or a Ziploc and add the vinegar, garlic, salt and pepper to taste. You can add some rosemary too, here, pulling the leaves from the stem but I add it while roasting.

Keep the marinade and chicken in your fridge for about four to five hours, maybe more.

Heat the oven to 400 F. Take a roasting pan and spray the oil or melted butter. Arrange the chicken pieces in it, removing them from the marinade, yet keeping them moist.

Add the rest of the rosemary, pulling the leaves from the stem.

Spray the chicken pieces with oil or butter.

You can also, in the same roasting pan add chopped creamer or mid sized potatoes, any colors you like. Cover them with additional rosemary leaves. Its important to chop the potatoes so that they get done with the chiken.

Place the pan in the oven for about 25 – 30 mins or till done. My oven is erratic and it sometimes takes more.

Enjoy the smell of rosemary as it cooks and you bring it out! I have heard that you can add lemon juice sometimes to the marinade, but I have never tried that.

The real fun with this recipe starts after. There is just so much you can do with leftovers – mix it with mayo, celery, onions for a chicken salad, add it to your caesar salad next day, add it on a pizza with cheese and tomato sauce or have in a burrito with salsa, beans and guacamole or sour cream.
